Recipe - Lakeland Fog

Is there a drink more classic and cozy than a London Fog? It’s just a simple blend of earl grey tea, vanilla syrup, and steamed milk that evokes feelings of comfort and familiarity, like being wrapped in a warm hug. Our twist on the London Fog is called a Lakeland Fog (lovingly named after our hometown), and it uses our Rainy Bookstore tea, a small amount of lavender simple syrup, and vanilla oat milk for the perfect tea latte - equally delicious hot or iced.

You’ll Need:

  • Rainy Bookstore Tea

  • Filtered water

  • Lavender syrup (we like this recipe or you can buy a nice bottle like this)

  • Vanilla oat milk (Califia Farms and Planet Oat both have great versions!)

  • A kettle, scale, and timer

Hot Instructions:

  1. In an electric kettle, heat your water to 195°F. If you don’t have a kettle, bring water to a boil and then hold it off the heat for about 10 seconds.

  2. Using a scale, weigh out 3g of Rainy Bookstore tea and fill an infuser. Put the infuser in a large (at least 12oz) mug.

  3. Add 10oz (by weight) of hot water to the mug with the infuser. Allow the tea to steep for 5 minutes.

  4. While the tea is steeping, warm up your milk. We prefer to use an electric milk frother like this, but you can also warm the milk on the stove or in the microwave, and froth with an immersion milk frother.

  5. When the tea is done steeping, remove the infuser and discard the leaves. Add about 2 tsp of lavender syrup to the brewed tea and give it a stir.

  6. Top with 2oz (or more to taste) of the frothed vanilla oatmilk. Enjoy! :)

Iced Instructions:

  1. In an electric kettle, heat your water to 195°F. If you don’t have a kettle, bring water to a boil and then hold it off the heat for about 10 seconds.

  2. Using a scale, weigh out 3g of Rainy Bookstore tea and fill an infuser. Put the infuser in a mug or heat-resistant measuring cup.

  3. Add 5oz (by weight) of hot water to the mug with the infuser. Allow the tea to steep for 5 minutes.

  4. Fill a large glass all the way with ice.

  5. When the tea is done steeping, remove the infuser and discard the leaves. Add about 2 tsp of lavender syrup to the brewed tea and give it a stir.

  6. Pour the brewed tea concentrate over the ice. Top off with a little more ice if needed.

  7. Fill the cup the rest of the way with vanilla oat milk. Stir if desired and enjoy! :)
